Bells at Killcare Boutique Hotel, Restaurant and Spa has launched an exciting new cooking school!
The Bells at Killcare cooking school is hosted by Manfredi at Bells head chef, Cameron Cansdell. Based around the seasonal bounty from Stefano's garden, and with a focus on the sustainable, fresh and simple Italian cuisine, participants learn the secrets of the Manfredi kitchen. The dishes are then enjoyed at a sit-down feast with Cameron and his team, paired with wines chosen from the multi award winning Bells at Killcare Wine list.

Early winter is a time to showcase some of our favourite legumes such as
farro and Australian organic whole red lentils. We use these with
interesting seasonal vegetables like treviso, radicchio and cime di rape
from Stefano's garden. Try your hand at fresh ravioli with prawns and
expect an aged beef tasting from our in-house dry aging room.
Wednesday 4th July, 2012 9am-2.30pm $150PP
Mid winter is the perfect time for braised cuts of meats. We source the
tenderest young veal and pair with our garden fresh winter beets,
potatoes and sorrel. To complete the menu, whole fish will be roasted
and all will be served in the Manfredi at Bells dining room by the warm
glow of the open fires.

Late winter in Stefano’s garden sees early crops of spring peas, carrots
and sugar snaps. Learn how to cook whole duck and the famous Manfredi
fish and shellfish stew. Complete the menu with a warming strudel and
freshly churned gelato.
